Ingredients

– 1082g raw chicken breast, cut into bite-sized pieces
– 170g soy sauce
– 140g water
– 67g honey
– 60g Hoisin sauce
– 18g minced garlic
– 10g ginger paste
– red pepper flakes to taste
– 278g zucchini, chopped
– 300g yellow squash, chopped
– 87g red bell pepper, chopped
– 60g cashews
– 1 tbsp cornstarch

Instructions

  1. Spray slow cooker with 0 calorie nonstick cooking spray
  2. Place chicken into crock pot.
  3. Pour soy sauce, 1/2 cup water (save 1/2 cup for later), honey, Hoisin sauce, garlic, & ginger paste on top of chicken.
  4. Cook on low for 3.5 hrs.
  5. Place zucchini, yellow squash, red bell pepper, and cashews over chicken and cook for another 30 minutes. During this time, mix 1/2 cup water with 1 tbsp cornstarch and place that in crock pot as well (to thicken sauce).
  6. Once veggies are tender, serve Kung Pao Chicken over rice and enjoy! It also goes great with cauliflower rice if you’re wanting to keep carbs low.
