Ingredients

– 90g white onion, finely diced
– 540g raw chicken breast, cut into small pieces
– 65g light butter
– 7g all purpose flour
– 60g light sour cream
– 21g sharp cheddar cheese, grated
– 280g steamed broccoli florets
– 75g cooked brown rice
– garlic salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cook chicken and onions on the stovetop over medium-high heat until cooked through. Stir every minute or so.
  3. Add steamed broccoli and rice to mixture and turn heat to low.
  4. In a separate bowl, microwave butter until melted. Stir in flour, sour cream, and 14g (2 tbsp) cheese (save 7g/1 tbsp).
  5. Pour sauce mixture over chicken/vegetable skillet and stir well.
  6. Pour contents of skillet into medium round oven-safe casserole/pie dish and bake for 20 minutes at 350 degrees.
  7. Sprinkle 7g (1 tbsp) cheese on top and bake another 5 minutes. Enjoy the Casserole!
