Ingredients

– 160g riced cauliflower
– 33g vanilla whey
– 1/2 tsp vanilla extract
– 100g fruit of your choice
– 11g flaxseed meal
– 14g coconut flour
– 46g egg whites
– 1/2 tsp baking powder
– Stevia to taste
– 130g nonfat Greek yogurt

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Combine cauliflower, whey, flaxseed meal, coconut flour, egg whites, baking powder, and stevia in a food processor until dough consistency is reached.
  2. Cook this “crust” as if it were a pancake on a sprayed pan over medium heat and flip when done, cooking both sides.
  3. In another bowl, combine stevia, vanilla extract and Greek yogurt.
  4. Spread the Greek yogurt mixture over the crust and top with your favorite fruit! Enjoy!
