Ingredients

– 80g dry red lentils
– 1 15 oz can kidney beans, rinsed and drained
– 14 oz extra firm tofu
– 1 packet taco seasoning

Instructions

  1. Cook lentils according to directions on packaging.
  2. Place cooked lentils, red beans, taco seasoning and tofu into food processor or blender and pulse until crumbly like taco meat.
  3. Before adding to tacos, cook the vegan “meat” in non-stick pan over the stovetop on low-medium heat until warmed. Enjoy!
