– 80g dry red lentils
– 1 15 oz can kidney beans, rinsed and drained
– 14 oz extra firm tofu
– 1 packet taco seasoning
- Cook lentils according to directions on packaging.
- Place cooked lentils, red beans, taco seasoning and tofu into food processor or blender and pulse until crumbly like taco meat.
- Before adding to tacos, cook the vegan “meat” in non-stick pan over the stovetop on low-medium heat until warmed. Enjoy!
