Ingredients

– 34g light butter
– 55g greek cream cheese (or light cream cheese)
– 30g egg whites
– 14g sugar free fat free lemon pudding mix
– 20g unsweetened applesauce
– Stevia/Splenda to taste
– ¼ tsp baking powder
– 70g vanilla whey
– 2 drops yellow food coloring

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt/soften cream cheese and butter in microwave until warm (not too hot).
  3. Combine, then add all other ingredients. Stir until smooth cookie dough consistency is reached.
  4. Place parchment paper on baking tray and scoop 8 even scoops of cookie dough onto parchment paper.
  5. Bake for 8-10 minutes until you can stick a toothpick through the middle of a cookie and it comes out clean. Enjoy the Cookies!
