Ingredients

– 113g light butter (1 stick)
– 1 egg
– 30g unsweetened applesauce
– 100g all-purpose flour
– 140g vanilla whey
– 40g powdered sugar
– Stevia/Splenda to taste
– 1/4 tsp baking powder
– 1/2 tsp vanilla extract

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt butter in the microwave until about half-way melted.
  3. Whisk in applesauce and egg.
  4. Stir in the rest of the ingredients (only 100g of the 140g vanilla whey) and knead until dough is formed. I recommend using a protein powder with at least SOME carbs/fat (not whey isolate–can cause the recipe to be too dry).
  5. Bake cookies on a sprayed cookie sheet for 8-10 minutes until soft. Remove from cookie sheet immediately and let cool.
  6. In a small bowl, add 40g vanilla whey, vanilla extract, Stevia/Splenda to taste, a little water or almond milk until icing consistency is reached.
  7. Ice cookies and place in freezer for 15 minutes until icing hardens. Enjoy!
