Ingredients

– 30g light butter (Country Crock brand recommended)
– 55g chocolate whey
– 1/4 tsp baking powder
– Stevia/Splenda to taste (I used about 1 tbsp)
– 45g all purpose flour
– 10g sugar free fat free chocolate pudding mix
– 100g unsweetened applesauce
– 5g cocoa powder
– 46g egg whites
– red food coloring to the desired color
– 50g whipped Greek cream cheese

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients except cream cheese in a large bowl until thoroughly mixed.
  3. Add red food coloring until a deep red color is reached.
  4. Using a small cookie scoop (or spoon) scoop batter onto baking sheet lined with parchment paper (should make about 14 small cookies).
  5. Bake for 10-15 minutes until done.
  6. Let cool, then make 7 cookie “sandwiches”/whoopie pies by placing whipped greek cream cheese between two cookies. Feel free to sweeten the cream cheese with a little stevia/splenda to taste.
  7. Enjoy! Cover and refrigerate to store.
