– 45g light butter
– 45g Neufchatel cheese
– 34g sugar-free fat-free lemon pudding mix
– 65g vanilla whey
– 55g all-purpose flour
– 61g unsweetened applesauce
– 10g lemon juice
– 1 egg
– 1/4 tsp baking powder
– Stevia/Splenda to taste

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt butter and Neufchatel cheese together and stir well. Let cool to room temperature or slightly warm.
  3. Stir in applesauce, then all other ingredients and mix well.
  4. Spray mini cake baking molds with nonstick spray and evenly place batter in 6 molds. This recipe can also be made as cupcakes if you don’t have a mini cake pan (it will probably make more than 6 though).
  5. Bake for 15-20 minutes until you can stick a toothpick in and it comes out clean.
  6. Enjoy! Keep refrigerated and covered for freshness.
