Ingredients

– 86g vanilla whey
– 30g quick oats
– 40g unsweetened applesauce
– 23g light butter (Country Crock recommended)
– 11g honey
– 18g finely chopped dried apricots

*To make this recipe vegan, simply sub vegan protein powder.

Instructions

  1. Melt butter in the microwave and stir in applesauce.
  2. Add all other ingredients except for apricots and mix well until dough is formed. If the dough is too sticky, add more protein powder (account for it); the amount may vary slightly depending on what type of protein powder is used.
  3. Form into 11 small cookies and press dried apricots into the middle of the cookies.
  4. Refrigerate for at least an hour to set and enjoy the Cookie Bites!
