– 112g light butter, softened
– 75g stevia (or to taste)
– 56g powdered sugar
– 1 tsp vanilla extract
– 1 tsp baking powder
– 100g vanilla whey
– 120g buttermilk (or to consistency)
– 310g all purpose flour
– 2 eggs

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees F.
  2. Using an electric or stand mixer, combine butter, eggs, stevia, vanilla extract and powdered sugar.
  3. Slowly add in flour, baking powder, and whey until thoroughly mixed.
  4. SLOWLY add buttermilk until cookie dough consistency is reached (be careful that it is not too sticky or it will stick to rolling pin and get very messy). You may add more or less than 1/2 cup buttermilk depending on what protein powder is used, so be careful to add slowly until just the right consistency is reached.
  5. Roll out dough onto floured surface with floured rolling pin until about 1/4 inch thick, then use cookie cutters to cut out cookies.
  6. Place cookies on baking sheet lined with parchment paper and bake for 5-10 minutes until done. Enjoy!
