– 90g chocolate whey
– 1 egg
– 5g dark cocoa powder
– 5g regular cocoa powder
– 32g all purpose flour
– 50g mashed banana
– 24g finely chopped walnuts
– 16g cashew butter
– 30g mini marshmallows
– Stevia/Splenda to taste

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, melt cashew butter and add mashed bananas. Let cool, add egg, and mix.
  3. Mix in all other ingredients thoroughly except for walnuts and marshmallows. Add water until cake batter consistency is reached.
  4. Spray cupcake pan with nonstick cooking spray and fill cupcakes.
  5. Top with walnuts and marshmallows.
  6. Bake for 10-15 minutes until you can stick a toothpick in and it comes out clean. You can also leave the center of the cupcake slightly gooey! Enjoy!
