Rich & Decadent Chocolate Zucchini Protein Brownies

Measurement Style:


– 112g light butter (1 stick)
– 100g chocolate whey
– 40g coconut flour
– 250g zucchini
– 45g Hershey’s Dark cocoa powder
– 46g liquid egg whites
– 50g chocolate Walden Farms syrup
– Stevia/Splenda to taste
– 1 tsp baking powder

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture.   1. Preheat oven to 350 degrees F.
  2. Melt butter in the microwave.
  3. Puree zucchini in a food processor until there are no chunks.
  4. Add zucchini, Walden Farms syrup, and liquid egg whites to a large bowl and stir.
  5. Slowly whisk in dry ingredients little by little until brownie batter consistency is formed.
  6. Pour into a 9×9” baking pan lined with parchment paper and bake for 20 minutes. Enjoy!
