Ingredients

– 85g light butter (Country Crock brand is recommended)
– 75g vanilla whey
– 7g fat free sugar free vanilla pudding mix
– 100g all purpose flour
– 100g unsweetened applesauce
– 1/2 tsp baking powder
– 50g liquid egg whites
– Stevia/Splenda to taste (I used about 1-2 tbsp)
– 150g canned apple pie filling
– 1/2 tbsp cinnamon
– 15g caramel sauce

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt butter in a large bowl until melted.
  3. Add all other ingredients and mix well except for apple pie filling, cinnamon and caramel.
  4. Pour batter into a greased 9×9 cake pan.
  5. In another smaller bowl, combine apple pie filling, cinnamon and caramel.
  6. Scoop apple pie filling mixture with a spoon on top of the cake batter in the pan.
  7. With a fork, swirl the pie filling on the cake batter so it looks like cinnamon rolls.
  8. Bake for 20-30 minutes until cooked through (check with toothpick). Enjoy!
