Ingredients

– 135g low fat cottage cheese
– 60g vanilla whey
– 1/4 tsp baking powder
– 46g egg whites
– Stevia/Splenda to taste
– a dash of rainbow sprinkles

*Note: When cooking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Combine all pancake ingredients and stir well.
  2. Cook on stovetop over medium-low heat. Make sure pan is sprayed extremely well with non-stick spray before pouring in batter, as cottage cheese is very sticky.
  3. Pour batter in, flip, and repeat for 3 total pancakes.

If desired, add cream cheese frosting (greek whipped cream cheese + stevia to taste) on top of pancakes. Enjoy the Protein Pancakes!
