Ingredients

– 80g mashed banana
– 58g light butter (Country Crock brand is recommended)
– 110g plain yogurt
– 50g liquid egg whites
– 14g sugar free fat free vanilla pudding mix
– 40g fresh squeezed orange juice
– 30g all purpose flour
– 1/4 tsp baking powder
– Stevia/Splenda to taste
– 75g vanilla whey
– orange zest to taste (I used zest from 2 oranges)
– 30g dried cranberries
– water to cake batter consistency (as needed)

*Note: When baking with protein powder, we recommend staying away from pure isolate powder because it can create a cardboard texture. Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Melt butter slightly in large bowl, then add all other ingredients.
  3. Mix well with large spoon.
  4. Pour batter into muffin pan (makes 9).
  5. Bake for 10-15 minutes, checking every few minutes. It’s best if moist in the middle of each muffin. Oven times may vary.
  6. Feel free to drizzle with protein icing (vanilla whey + stevia + a little water mixed). Enjoy the Protein Muffins!
