Ingredients

– 244g baby red potatoes cut in half
– 200g extra lean kielbasa sausage (Piller’s brand has great macros)
– 386g sweet corn on the cob
– 1 tbsp minced garlic
– 14g light butter
– 15g fresh squeezed lemon juice
– 480g water
– 1 tbsp Old Bay seasoning
– 1.5 lb frozen peel-on jumbo shrimp

*Note: Make sure and carefully read the instructions to your instant pot before attempting this recipe.

Instructions

  1. Turn instant pot on sautée mode.
  2. Add butter and minced garlic and stir for a few minutes.
  3. Add water, lemon juice, 1/2 tbsp old bay seasoning, potatoes, corn, and sausage.
  4. Set instant pot to pressure cook for 4 minutes, then do a quick release.
  5. Add shrimp (still frozen), then pressure cook for 1 more minute. Do another quick release when done cooking.
  6. Garnish with parsley, 1/2 tbsp Old Bay seasoning and spritz with fresh lemon juice. Serve and enjoy the Low Country Boil!
