– 8g minced garlic
– 224g lean Spicy Italian turkey sausage (2 links)
– 400g zucchini, diced
– 240g crushed tomato
– 200g mushrooms
– 1/2 tsp basil
– 1/4 tsp oregano
– salt and pepper to taste

Instructions

  1. Remove casing from sausages, cut into small pieces, and cook with garlic on stovetop over medium high heat.
  2. Once sausage is almost done, add zucchini and cook until tender.
  3. Add crushed tomato, mushrooms, and spices and let simmer for 5 minutes, stirring every 30 second.
  4. Serve hot, sprinkle a little Parmesan cheese on top, and enjoy the Ratatouille!
