Ingredients

– 870g (about 2 lbs) 99% lean ground turkey
– 100g diced carrots
– 100g diced celery
– 100g diced white onion
– 7g minced garlic (or 2 garlic cloves, finely chopped)
– 8 medium leaves fresh basil, finely chopped
– 30g tomato paste
– 413g canned diced tomatoes (1 can)
– 300g cannellini beans, rinsed and drained (1 can)
– 900g low sodium beef broth
– 2 bay leaves
– salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat on the stovetop, cook carrots, celery, and onions for 3-5 minutes.
  2. Add garlic and lean ground turkey. Cook until turkey is cooked through, for about 7 minutes. Stir constantly.
  3. Add all other ingredients, stir well, and let simmer for 25 minutes.
  4. Remove bay leaves and enjoy the soup! Feel free to top with a dash of Parmesan cheese and garnish with a few fresh basil leaves.
