– 2 lb 99% lean ground turkey
– 280g chopped onion
– 24g taco seasoning
– 70g low-fat Mexican blend cheese
– 320g salsa
– 370g canned black beans (rinsed and drained)
– 6-7 low carb high fiber wraps (I used Xtreme Wellness brand)
Instructions
Preheat oven to 350 degrees F.
Spray pan with nonstick spray and heat stovetop to medium-high heat. Cook chopped onions for 3 minutes. Add turkey and taco seasoning to pan and cook with onions.
Place 1/3 of the turkey/onion mixture into the casserole dish. This will be the first layer. Evenly distribute 1/3 of the salsa over that, then 1/3 of the beans, then 1/3 of the cheese.
Cover the first layer with the wrap. You can tear the wrap into pieces and place over the first layer so that there are no spaces. The amount of wraps you will use for this recipe depends on the surface area of your casserole dish.
Repeat steps 3-4 and then step 3 again. So you will have 3 meat layers and 2 wraps separating the layers.
Bake for 20 minutes at 350 degrees then let cool for a few minutes. Enjoy the Burrito Casserole!
