Ingredients

– 58g light butter
– 100g mashed bananas
– 100g vanilla whey
– 32g fat-free sugar-free pistachio pudding mix
– 60g all-purpose flour
– 90g 30 calorie almond milk
– 1 egg
– Stevia/Splenda to taste
– ¼ tsp baking powder

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt butter in a mixing bowl and let cool to room temperature.
  3. Mix in mashed bananas and egg, then stir in all other ingredients until batter is smooth.
  4. Pour into mini loaf pans or large loaf pan greased with 0 calorie cooking spray.
  5. Bake for 15-20 minutes (small loaf pans) or 30-35 minutes (large loaf pan), or until you can stick a toothpick in the middle and it comes out clean. Enjoy the Protein Bread! Feel free to add a little powdered sugar on top for a few extra carb macros.
