Ingredients

– 60g instant oatmeal
– 1 tsp dried lavender
– 58g honey
– 2 large eggs
– 38g vanilla whey
– 14g coconut flour
– Stevia/Splenda to taste
– 1/2 tsp baking powder
– water to consistency

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, mix all ingredients together except for water.
  3. Add water VERY slowly until you reach a thick batter consistency (muffin batter).
  4. Bake for 10 minutes. Continue to bake but check every 3 minutes with a toothpick. When toothpick comes out clean, the muffins are finished! Enjoy the Muffins!
