Ingredients

– 65g light butter
– 250g unsweetened applesauce
– 200g vanilla whey*
– 75g all-purpose flour
– 1 tbsp cinnamon
– 30g egg whites
– 1/4 tsp baking powder
– Stevia/Splenda to taste
– Cashew milk/almond milk to cake batter consistency
– red pepper flakes to taste (start with ½ tsp)

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, melt butter. Stir in applesauce, then slowly add all other ingredients.
  3. Depending on the type of whey used, you may need more or less water to create cake batter consistency.
  4. Place dough into greased loaf pan and bake for 30-40 minutes until you can stick a toothpick in the middle and it comes out clean.
  5. Feel free to add “protein icing” (Stevia + protein powder + a little cashew/almond milk). Enjoy the Protein Bread!
