Cinnamon Sugar Churro Protein Waffles

Measurement Style:


– 40g vanilla whey
– 1 tsp butter flavor/extract
– 14g coconut flour
– Stevia to taste
– 1/2 tsp baking powder
– 46g egg whites
– 1 tbsp cinnamon
– water to consistency

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.


  1. In a bowl, combine all ingredients except for half of the cinnamon. Add water until a waffle/pancake batter consistency is reached. You will not have to add very much.
  2. Pour mixture into a sprayed waffle maker and cook for 2-3 minutes, until waffle is done.
  3. In a small bowl, mix together stevia with the other half of the cinnamon (you can really use however much you’d like).
  4. Place waffle on a plate and sprinkle the cinnamon/Stevia mixture on top.
  5. Walden Farms 0 calorie pancake syrup and 5 calorie fat free Reddi-whip cream goes perfectly on top too! Enjoy!
