Ingredients

– 100g vanilla whey
– 80g mashed banana
– 20g light butter
– 15g coconut flour
– 1 tsp almond extract
– 40g egg whites
– Stevia/Splenda to taste
– ¼ tsp baking powder

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt butter, then add mashed bananas.
  3. Stir in the rest of the ingredients until dough is formed.
  4. Place dough on cookie sheet covered with greased parchment paper.
  5. Form dough into square (as square as you can make it; corners will be rounded).
  6. Bake for 15 minutes. Cut length-wise into 8 pieces and enjoy!
