Ingredients

– 60g vanilla whey
– 370g zucchini
– 2 tbsp ground cinnamon
– 60g coconut flour
– 11g flaxseed meal
– 2 eggs
– 1 tsp vanilla extract
– Stevia/Splenda to taste
– 1/2 tsp baking powder

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place zucchini in a food processor until it is chopped into tiny pieces (not pureed).
  3. Combine all ingredients and mix well.
  4. Place mixture into bread pan greased with nonstick spray.
  5. Bake for 30-40 minutes. Oven time will vary a little so keep a close watch. When a toothpick comes out clean, you know it’s done! Enjoy the Zucchini Bread!
