Ingredients

– 50g vanilla whey
– 70g instant oatmeal
– 60g light butter
– ¼ tsp coconut extract
– 46g egg whites
– 12g unsweetened coconut flakes
– 15g chocolate chips
– ¼ tsp baking powder
– Stevia/Splenda to taste
– water to cookie dough consistency (if needed)

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Preheat oven to 500 degrees F.
  2. Soften butter for a few seconds in the microwave then stir in all other ingredients except for coconut flakes until smooth dough consistency is reached. Add a little water if necessary (depends on protein powder used)
  3. Spread dough evenly on a greased parchment paper on baking sheet; form into a large rectangle about ¼” thick.
  4. Press coconut flakes onto top of dough and bake for 10 minutes until done.
  5. Cut into 10 pieces and enjoy the Protein Bars!
