Ingredients

– 280g frozen broccoli florets
– 120g low-fat shredded cheddar cheese
– 6 leaves fresh basil, chopped finely
– 100g unflavored protein powder (I used Quest)
– 32g breadcrumbs
– ¼ tsp pepper
– ½ tsp salt
– 1 beaten egg

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand.

Instructions

  1. Preheat oven to 350 degrees.
  2. Microwave or steam broccoli until just slightly warm.
  3. Place broccoli and cheese in food processor and pulse until broccoli pieces are about the size of small grains of rice.
  4. Pour riced broccoli/cheese into large bowl and add egg, spices, and unflavored protein powder until thoroughly mixed.
  5. Place about 70g (½ cup) breadcrumbs in a separate bowl.
  6. Form broccoli mixture into 12 small balls and generously coat with breadcrumb mixture. Broccoli mixture will be very sticky, that is ok!
  7. Place balls coated with breadcrumbs onto a baking sheet covered with parchment paper sprayed with nonstick spray.
  8. Bake for 15 minutes and enjoy the Broccoli Cheddar Bombs! These are best warm and fresh out of the oven.
