Ingredients

– 200g mashed banana (older bananas work best)
– 1/2 tsp vanilla extract
– 100g vanilla whey
– 100g all-purpose flour
– 60g whole milk
– 1 large egg
– 1/2 tsp baking powder
– Stevia to taste
– 28g coconut oil

*Note: When baking with protein powder, we recommend staying away from pure isolate powder as that does not bake well (turns recipes to a cardboard texture). Whey/Casein blends usually work best for baking — our favorite is Devotion Nutrition brand. Using another brand of protein powder may result in slightly different macros.

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, melt coconut oil, then combine and stir all ingredients until cake batter consistency is reached.
  3. Pour batter into greased bread pan.
  4. Bake for 15-25 minutes and use a toothpick to check for readiness. Lightly press down on the top center of the bread; it should still be soft to ensure the middle is slightly gooey. That makes for the best banana bread! Enjoy!
