Ingredients

– 1/2 cup water
– 15g sugar
– 1 packet active dry yeast
– 2 tbsp butter
– 1 egg
– 55g buttermilk
– 1 tsp vanilla extract
– dash of salt
– 280g all purpose flour
– 64g vanilla whey

Instructions

  1. Heat water to 105 degrees F in a cup.
  2. Add 1 1/3 tbsp sugar and active dry yeast.
  3. Stir, then cover with plastic wrap for 10 minutes.
  4. Pour the yeast/water into a large bowl.
  5. Add melted butter (make sure it’s cooled down), beaten egg, buttermilk, vanilla extract, and a dash of salt. Stir well.
  6. Next, add in the protein powder first, then the flour little by little and mix together until dough is formed. You may need to use a little more or a little less flour to reach desired consistency.
  7. Knead dough for 5 minutes.
  8. Place dough in a greased bowl and let it raise in a warm spot for 10 minutes. A trick I like to use is boiling water in the microwave in a cup, then placing the dough in the microwave with the warm water. The heat from the water will raise the dough.
  9. Roll out dough and cut into squares about 1.5 x 1.5 inches and about 1/4 inch thick.
  10. Place onto baking sheet lined with parchment paper and let it raise again for 20 minutes in a warm place. You can use the oven at a low temperature cracked open to raise them.
  11. Air fry each dough square for 2-3 minutes each at 370 degrees F. I highly recommend checking on the beignets every minute or so to make sure they’re not over-done.
  12. Feel free to sprinkle a little powdered sugar on top and enjoy the Air Fried French Beignets!
