Ingredients

Chicken:
– 1 tbsp olive oil
– 1 tsp minced garlic
– 712g raw chicken, cut into bite-sized pieces
– 2 tsp coriander
– 1 tsp paprika
– 2 tsp oregano
– 1/2 tsp black pepper
– 1/2 salt
– 15g fresh lemon juice

Cauliflower Rice:
– 567g (20oz) bag frozen riced cauliflower
– 30g fresh lemon juice
– 1 tsp garlic salt
– 1 tsp coriander
– 1/2 tsp oregano
– 1 tsp cumin
– 1 handful fresh parsley, chopped

Other Ingredients:
– 160g chopped cucumber
– 60g canned chickpeas, drained
– 120g cherry tomatoes, sliced in half
– 40g sliced black olives

Instructions

  1. Add olive oil to large pan over stovetop on medium-high heat
  2. Add minced garlic, then chicken.
  3. Add spices to chicken and cook, stirring and turning the chicken over occasionally to make sure chicken cooks evenly. When chicken is almost done, add lemon juice. Continue to cook until done.
  4. Spray another large pan with nonstick cooking spray, then add cauliflower. Stir to heat evenly.
  5. Add spices and lemon juice, continue to stir until heated through.
  6. Assemble 4 bowls with even amounts of cauliflower rice, chicken, cucumber, chickpeas, cherry tomatoes and black olives.
