– 1/2 cup water
– 15g sugar
– 1 packet active dry yeast
– 2 tbsp butter
– 1 egg
– 55g buttermilk
– 1 tsp vanilla extract
– dash of salt
– 280g all purpose flour
– 64g vanilla whey
Instructions
Heat water to 105 degrees F in a cup.
Add 1 1/3 tbsp sugar and active dry yeast.
Stir, then cover with plastic wrap for 10 minutes.
Pour the yeast/water into a large bowl.
Add melted butter (make sure it’s cooled down), beaten egg, buttermilk, vanilla extract, and a dash of salt. Stir well.
Next, add in the protein powder first, then the flour little by little and mix together until dough is formed. You may need to use a little more or a little less flour to reach desired consistency.
Knead dough for 5 minutes.
Place dough in a greased bowl and let it raise in a warm spot for 10 minutes. A trick I like to use is boiling water in the microwave in a cup, then placing the dough in the microwave with the warm water. The heat from the water will raise the dough.
Roll out dough and cut into squares about 1.5 x 1.5 inches and about 1/4 inch thick.
Place onto baking sheet lined with parchment paper and let it raise again for 20 minutes in a warm place. You can use the oven at a low temperature cracked open to raise them.
Air fry each dough square for 2-3 minutes each at 370 degrees F. I highly recommend checking on the beignets every minute or so to make sure they’re not over-done.
Feel free to sprinkle a little powdered sugar on top and enjoy the Air Fried French Beignets!
